Avocados are healthy and they are abundant in Mexico.

Villa Amor, Villa Amor del Mar, La Cruz de Huanacaxtle

I enjoy at least half an avocado per day. I was delighted when my niece, Courtney, was visiting and she suggested we make Avocado Margaritas. I squinched up my nose not thinking that was an ideal combination. She said “They’re really good”! So, I made them for all of our guests and they raved about both the alcoholic and non-alcoholic versions. Creamy, smooth and yummy!

 Avocado Margarita (inspired by and recipe from Fernando’s Pub in Kelowna)

  • 1 oz lime juice
  • 1 oz simple syrup ( 2 parts sugar, 1 part water – boil)
  • ¼ avocado
  • Pinch of cilantro
  • 1 oz tequila
  • ½ oz triple sec
  • Mix all ingredients together and blend.

* For non-alcoholic, omit alcohol and blend,

We made enough for 10 people, which equaled 2 blenders full. I also used cane sugar, which is readily available here in Mexico. What I did for 1 blender full for 4 people;

  • 4 oz lime juice
  • 4 oz simple syrup (2 parts sugar, 1 part water – boil)
  • 1 avocado
  • Pinch of cilantro
  • 4 oz tequila
  • 2 oz Cointreau

I added ice to fill the blender and blended until smooth.

Serve it in an iced glass with a salted rim and enjoy!
